This recipe makes a super simple appetizer or side dish. The sweetness of the onion cooked with the heat from Jalapeño EVOO creates a palate pleasing mix of flavors in a creamy bean dip!
Appetizers / Sides
1/2 Cup Sciabica's Jalapeno Extra Virgin Olive Oil
16 Oz Pinto Beans
1/2 Wheel Queso Fresco (Mashed)
1 Tsp Sea Salt
Slice half of one onion into strips. Add onion to frying pan with Jalapeño Extra Virgin Olive Oil. Cook over medium-high heat until soft and slightly browned.
Once Onion is caramelized, add Pinto Beans and salt. Continue cooking over medium-high heat for 8-10 minutes. Stir occasionally.
Mash all of the ingredients together in the pan.
Mash half of a wheel of Queso Fresco into crumbles.
Transfer Bean Dip to a serving bowl and garnish with Queso Fresco!
