Ingredients

  • 3/4 Cups Mission Buttery and Sweet Olive Oil

  • 2 Cups All Purpose Flour

  • 2 Cups Old Fashioned Oats

  • 1 teaspoon Baking Soda

  • 1 teaspoon Baking Powder

  • 2 Cups Brown Sugar

  • 2 Eggs

  • 2 Tablespoons Milk

  • 1 Tablespoon Vanilla Extract

  • 1 Teaspoon Salt 

  • 12 oz Dark Chocolate Bar(s), Hand Chopped For Best Result (Chips will work too) 

  • 1 Cup Chopped Walnuts

Directions

  1. In a large bowl or stand mixer, add brown sugar and olive oil whisk until smooth

  2. Whisk in two eggs, milk, and vanilla until evenly combined

  3. In a separate bowl combine flour, oats, baking soda, baking powder, salt, walnuts, and chocolate pieces and mix evenly.

  4. Fold dry ingredients into the wet mixture until evenly distributed, do not overwork

  5. Using your hands, remove dough from the bowl forming a log shape (2-2.5” in diameter) over a large sheet of plastic wrap

  6. Once your dough is shaped, wrap tightly in plastic wrap. Feel free to use plastic wrap to help with final shaping.

  7. Freeze until solid

  8. Preheat oven to 350° F

  9. Remove frozen dough from plastic and using a bread knife cut ½” pucks

  10. Place on a parchment-lined baking sheet with 2” spacing (Pro-Tip: Sprinkle Flake Salt on top of your cookies for a POP of savory flavor)

  11. Bake at 350° F for 10-15 minutes or until golden brown along the edges
