Pasta Aglio e Olio

Bring a large pot of salted water to a boil and cook the pasta until al dente.

While the pasta cooks, warm the basil olive oil in a wide skillet over medium-low heat. Add crushed garlic and gently cook for about 1 minute. Stir in the crushed red pepper flakes and cook another 30 seconds.

Reserve about 1 cup of pasta water, then drain the spaghetti.

Add the hot spaghetti directly to the skillet. Toss well, adding a splash of pasta water to help the oil coat the noodles and create a silky sauce. Season with salt and fresh cracked black pepper.

Plate the pasta and finish with a final drizzle of basil olive oil and a sprinkle of Italian parsley. Finish with a generous shower of Parmigiano or Pecorino.
