2 Bundles Small Beets (3-4 Beets Per)
2 Tablespoons Rosemary Olive Oil
1/2 Cup Balsamic Vinegar
Pinch of Salt
3 Tablespoons Garlic Olive Oil
1 Lemon, Juiced
1 Cup Greek Yogurt
1/4 Cup Fresh Dill and Mint, Roughly Chopped
Salt To Taste
Sticky Balsamic
Fresh Mint and Dill
Clean beets under running water removing debris
Cut the top leafs off of the beets and leave the tails
Leave the skin on the beets and place in a parchment lined baking pan
Drizzle with olive oil, balsamic, and salt and cover in foil
Roast for 45-60 minutes until fork tender
Cool for a few minutes and peel the skin off while warm
Serve chilled or warm with creamy tzatziki
Add all ingredients in a small bowl and mix throughly
