This is our original label dating back to 1936, and is named after the town in Sicily in which Nick Sciabica learned the ancient art of olive oil production. A special varietal combination prepared by Nick Sciabica & Sons, this oil has a balanced fruitiness as it is a combination of California grown varieties. Marsala is designed to be a general-purpose Olive Oil and is excellent for all applications.
Unlike Sciabica's Olive Oils, Marsala is not a single varietal. In fact, it is a combination of our Sciabica's Varietal Olive Oils. At the end of our production season, we decide how much olive oil we will need for our Sciabica's line, then create a varietal combination for Marsala. This means that the combination of olive oils can change from year to year, especially during heavy or short crop cycles. This flexibility allows us to offer Marsala at a more affordable price point, even though it's the same quality as all of our 100% California Extra Virgin Olive Oils!

Sciabica Marsala olive oil is the oil I use at least 50% of the time as our “everyday” olive oil. The remaining percentage of the time, I’m using Sciabica’s flavored or other olive oils. Unless my dish calls for butter or a higher temp oil, it’s only Sciabica’s that I use. I’ve been ordering their oil since we left Modesto (and California) in 2005. That was over 20 years and 3 states ago.
It took me a long while to order the Marsala olive oil, specifically, thinking inaccurately that jug meant lower quality. (I think the Marsala name threw me too, reminding me of the Italian fortified wine.) I finally read the description and tried a gallon: haven’t stopped ordering it since then.
This oil is smooth, fruity, aromatic and excellent. The consistency between gallons is amazing. Sciabica’s has somehow figured out how to blend olive oils the way Gallo has been blending wines for decades. This olive oil is consistently fresh, flavorful, and my favorite.

I used to go to an Italian restaurant in Modesto that made great food. Then I started working there and found that one of their secrets was this oil. They’d use it for both pasta and chicken dishes. Now fast forward 25 years and I’m still using and loving it today.
For every day, and everything, Marsala olive oil is our favorite. Way better than any grocery store brand.
