Chipotle Deviled Eggs

  • 6 hard-boiled eggs
  • 1 tbsp Chipotle Olive Oil (plus more for finishing)
  • 2 tbsp mayo
  • 1 tsp mustard
  • Salt
  • Paprika

Start with peeled and cooled hard-boiled eggs. Cut eggs in half lengthwise. Gently scoop out the yolks with a spoon into a bowl. Set whites aside.

Mash yolks until smooth. Add mayo, mustard, chipotle olive oil, and a pinch of salt. Mix until creamy and slightly fluffy.

Spoon or pipe the filling back into the egg whites. A zip-top bag with the corner snipped works great if you want that clean swirl.

Decorate with paprika and finely chopped chives.
